How would a SQL select statement look like, that returns all Cases that run in a specific Process Model Version?

You could do that with following query:

SELECT * from IWA_Case c 
INNER JOIN IWA_TaskStart ts
ON c.TaskStartId = ts.TaskStartId
INNER JOIN IWA_TaskElement te
ON ts.TaskElementId = te.TaskElementId
WHERE te.ProcessModelVersionId = '<my process model version id>'
